- 3 large ripe bananas
- 1 tsp vanilla
- 2 Tbsp agave nectar
- 1/3 cup nut butter of choice (almond, cashew, peanut, sunflower, etc.)
- 1 1/2 cups oats
- 4 sheets vegan graham crackers
- 1 chopped bar of vegan chocolate or 1/2 bag of vegan choc chips/chunks
- 1/2 bag Dandies minis or other vegan marshmallow (watch for that gelatin!)
Preheat oven to 350°.
Blend bananas, nut butter, agave & vanilla in blender until smooth, set aside.
Crumble graham crackers into small chunks, add grahams and oats into large bowl.
Add banana mixture into bowl and mix thoroughly.
Stir in chocolate chunks and marshmallows.
Line baking sheet with parchment paper or reusable liner- form mixture into cookies, allowing room for marshmallows to fluff!
Bake for 10-14 minutes until lightly browned.
