These brownies are soft, chocolatey, and delicious! You would never guess that there is a can of beans hidden inside! But where do vegans get their protein?!
- 1 15 oz can black beans (rinsed and drained well)
- 3/4 cup cacao powder
- 1/2 cup oats
- 1/4 tsp salt
- 2 tsp pure vanilla extract
- 1 1/2 tsp baking powder
- 1/4 cup coconut oil
- 1/2 cup sweetener* (pure maple syrup, agave, date syrup, or sugar/coconut sugar)
- Optional: 1/2 cup+ chocolate chips
Preheat oven to 350°.
Blend all ingredients in food processor or blender except chocolate chips.
Pour mixture into large bowl, add in chocolate chips and stir.
Scoop into cupcake liners or lightly greased 8×8 pan or muffin pan. Fill liners 2/3 full.
Bake for 20-25 minutes.
Let cool & enjoy!
*I recommend using at least half liquid sweetener. I used pure maple syrup. If you use all sugar/coconut sugar add 1/4 cup plant based milk- they may be thicker and harder to scoop, but will still turn out yummy!
